One of the GREAT THINGS about limiting out on Rock Fish over and over again early in the Season like we have is that, not only is it GREAT FUN...

While many folks are sitting around watching early season football, Team ReelTime is taping each game and out SLAYING ROCKFiSH !!! 

And speaking of fresh ROCKFISH, here's a really nice, quick recipe that you can prepare for family and friends in 30 minutes or less:

* * * FRESH GRILLED - LIME PEPPER ROCKFISH !!! * * *

INGREDIENTS:

You can make your own Spice (#3 through #6 below) or use TONE'S LIME PEPPER SEASONING!!!

  1. (4) 1/2 LB Rockfish Fillets ( Hint: We can help YOU with this ; )
  2. (2) Fresh Lime
  3. (2) TSP Garlic Salt
  4. (2) TBL SP ONION SALT
  5. (1)  PINCH of Sugar
  6. (2) TBL SP of Parsley  
  7. (1/2) Cup of Minced Spring Onions
  8. (4) TBL SP of Real Butter
  • Preheat the Grill to medium heat ~ about 325 to 350 degrees
  • Rinse Rockfish fillets and pat dry.
  • Use (4) pieces of 12"x18" of Aluminum Foil.  Spray each with PAM anti-stick Spray
  • Then place each fillet on a piece of aluminum foil
  • Mix above ingredients #3 through #6 is a bowl and sprinkle each fillet; Then hand rub into fillet.
  • Sprinkle each fillet with Fresh Minced Spring Onions
  •  Place 1/2 TBL SP of Butter on the top each fillet
  • Cut each LIME in half Squeeze each on a fillet; Then place the rest of each Lime of the top of the fillet.
  • Gather Aluminum foil around each fillet loosely and fold then crimp so that no juices or steam is lost during cooking;
  • Grill for 6 to 12 minutes (6 minutes for each 1/2 inch thickness of fillet);
  • Remove promptly and rest each of 2 minutes.

Place each fillet on a plate and garnish with Thyme.  Serve with a side of Wild Rice and your favorite beverage. We suggest a Chardonnay or Pinot Grigio...
